The figure gives information on two different methods used in production of black tea. Overall, it involves five steps in both the processes starting with plucking of leaves from plant and ending with preparation of either loose tea or tea bag.

The first step begins with picking of fresh tea leaves from the tea plant. To ensure the quality of tea, only buds and top two leaves are picked after which the leaves are withered by placing the leaves on rack and passing air through them, due to which 60% of the moisture will be lost from the foliage. The leaves are further processed either by traditional method or modern method. The traditional process is used for preparing loose tea and it starts with rolling, where the leaves are rolled flat and broken. As a result, enzymes will be released from the leaves.

On the contrast, the modern method used for making tea bags involves cutting of the leaves, in which the foliage is cut, torn and curled and because of this small granular pieces are created. Indeed, this is a quicker process compared to traditional method. Next, oxidation or fermentation is carried out, where the rolled leaves are spread on tiles or cement. Here, the enzymes released form the leaves recast with air and change from green to copper colour.

Finally, the leaves are dried in an oven or hot air dryers due to which a total of 97% moisture is lost and imparts the flavour and aroma.
