Overall, at the end we get the perfect output of cheese after performing several procedures.
The raw milk is the most important ingredient in cheese. Basically to make cheese there are two ways, Let's first discuss about the most common method. Here the raw milk is pasteurized followed by the process of standardization and filteration of milk takes place.Whereas, when we talk about the traditional procedure directly the milk is undergone through a procedure called coagulation which is also referred as curdling by adding fermenting microorganisims through inoculation process. The method of coagulation is also done for the non-traditional way of cheese making. After the filteration the enzyme called rennet is used in coagulation process. During the coagulation process, the milk made into the form of curds through cutting.It is cooked well by stirring in a perfect way. When the cooking is done, the curds are placed in a vessel where the liquid is drained away. On the other, hand the remaining solid parts of curds is taken to the milling process.Here, the salt is added as to taste well.
After the process of salting, we get few products like fresh cheese,cottage and cream cheese.As, to get cheese as a final product it is poured into molds where these moulds are pressed. The residuals are drained off, on the other hand the moulds are undergone through a process called ripening for few days.
After this whole process we get the perfect ripened cheese.
