The diagram depicts how black tea is produced through two mediums of manufacturing.

Overall, there are five stages involved in both processes, which start with fresh tea leaves being hand-picked and finish up with the release of flavor and aroma.

First of all, people responsible for picking tea leaves will only choose bud and two top leaves to ensure the quality of the tea. After that, those hand-picked leaves will be put on a rack to be withered to decrease the moisture to 40%, as well as allowing air to pass through the leaves.

The next step is when two processes become distinctive: the traditional method used to make loose tea begins with flatting out and breaking the leaves, after which enzymes will be released. However, the modern technique focusing on making tea bags stem from cutting, tearing, and curling the leaves; as a result, granular pieces are created. The following stage is oxidation or fermentation where leaves change to copper color by virtue of the biochemical reaction between enzymes and air. The process continues with leaves being fired in the oven or dried in hot air dryers. At this point, the aggregate amount of moisture taken out is 97%. Finally, the ending stage of this is the emanation of the flavor and aroma.
