Overview, the process comprises 3 main stages, beginning with frying with a view to deactivating enzyme and drying, followed by either fermentation or aging and ending with compression for Pu-erh ripe tea and storage for its counterpart.
The process commences when tea leaves are fried in a pan with the purpose of deactivation of a certain substance containing in tea (enzyme). This is followed by rolling of the fried leaves and drying under the sun. In the next stage, it is divided into two types of tea and treated in different ways.
For the ripe tea, the loose raw tea is fermented with mold and then it proceeds to be compressed to get the final product (Pu-erh ripe tea). Turning to the remaining type of tea, the leaves are first to create Pu-erh raw tea. Subsequently, it is aged by storage instead of fermentation and finally vintage Pu-erh is available for using.
