Overall, there are seventeen main stages in the process, beginning with raw milk and ending with ripened cheese.
Firstly, there are two ways of processing raw milk. On the one hand, it goes through a set of pasteurization machines before being standardized and filtered to eliminate the impurities. Then, this liquid is poured into a huge tank. After the rennet, which is a type of enzyme and fermenting microorganisms are added to inoculate, the liquid undergoes some chemical reactions and becomes curds and whey. Another way of processing unpasteurized milk is to put it directly into the huge tank and mix the liquid with those chemicals. At the following stage, the coagulation liquid is cut, stirred, and cooked.
Having been cooked, the whey is drained out, leaving curds in the tank. Then curds are milled, and after that, it is added with salt to create fresh cheese including cottage and cream cheese. The remaining product is poured into molds and pressed by a specialized machine to eradicate the additional whey. After that, they are ripened before becoming the finished cheese product.
