The picture illustrates the steps of production of soft cheese. Overall, the manufacturing process involves five steps, in which water, milk and salt are mixed, fermented, heated and cooled down to make the final product, and this consumes around 20 hours.
First, the two main ingredients, water and milk, are combined together before the mixture is allowed to cool down at 5C for two hours. After the mixture is cooled down, it becomes a thin liquid, to which salt is added at this point, and then fermented at 35C at 2 hours. Following the fermentation, evaporation is started, whereby the thin fluid is converted to a thick liquid. In this stage, the fluid is heated at 100C for eight hours till it evaporates steam and becomes a thick form of liquid. Next is cooling, the final stage, where the thick fluid is cooled down to 5C for another eight hours and waste water is removed before filtering soft cheese, which is ready to be used,
