Overall, the process involves 9 to 11 steps before oil is stored and bottled from harvested olives.
In the first stage, olives are harvested from the trees by farmers and then collected into vat before the process of de-leafing begins. After that they are washed thoroughly with clean water later being sent to mill for the process of crushing to make a fine paste. The paste is then processed through malaxer at the temperature less than 27°C.

Later, it is centrifuged in press and produced pomace is then extracted to sent it out to refining factories for further process. On the other side, virgin oil produced from centrifugation is either separated to remove the waste water or decanted to separate water and solid. It is later stores into storage tank before being sent further for the process of packing into bottles.
