The line graph provides information on the level of acid generated in mouths from fruit sugar, cane sugar and honey over a period of 40 minutes.
Overall, cane sugar is the most acidic nutrient while honey produces the least amount of acid. Also, there is a gradual decrease in acid level in the 40-minute period.
It is obvious that the amount of acid in our mouth witnesses a sharp rise in the first 5 minutes after these three types of sweet food are consumed. The levels caused by cane sugar, fruit sugar and honey reach the highest points at 3.5 pH, close to 4 pH and just over 5 pH respectively at the 5th minute. After another 25 minutes of the cane sugar consumption, teeth are still in the risk of decay although the level of acid goes down. In contrast, the acid level resulting from honey remains at 5pH in the next 5 minutes before declining slightly until the 15th minute.
However, the dangerous levels of these three types continue to decrease over the time. It takes nearly 15 minutes for honey to become harmless, whilst cane sugar takes more than 30 minutes so that the likelihood of tooth decay is removed.
