The diagram illustrates ingridients which are used for a pazza's dough and the main steps of making it.
Overall, it can be seen that there are four ingridients and seven stages of preparing dough for pizza. During the process, a special equipment is used.
The dough is made of 4 cups (or 500 grams) of flour, 1.5 cups (or 325 grams) of water, 2 tablespoons of salt and half of a tablespoon of a dry active yeast. All of them must be put in a mixer bowl at the firsr step.
For the next three stages a mixer is used on a slow and medium speed. The second step continues for two minutes, during that time ingridients are mixed on a slow speed. After that the speed is increased to a medium level, and the process lasts for five minutes. When that time passes, the mixer is returned to a slow speed and mixes the dough for two minutes as it was at the second stage. When the dough is ready, it must be left for at least two hours, during which the dough should increase its size at twice. When the process of being doubled in size is over a pizzamaker must remove all bubbles in it and then divide the dough at three equals parts, each of 275 grams.
