However, the lecture concerns the topic of first wheat product with an emphasis on the process of preparing beer as the first wheat product, the speaker takes the time to explain why the three techniques describes in the text are not reliable when trying to prove bread as the first wheat product. Because of this, the information presented in the lecture directly contradicts what is stated in the text.

First, the article claims that the wheat is hard due to which it is required for early people to grind it first and convert it into the paste to make it soft, the professor refutes this point by saying that grounding of wheat is not required to make it softer.He states that if yo keep the wheat in the moist environment it automatically starts sprouting due to which it become soft and easy to eat.

Second, the article posits that baking makes food easier to eat and baked food can be stored for longer periods. However, the professor says that ancient people do not fire the wheat because they think that fire is not obvious to make the food better for eating and ancient people do not put efforts to fire wheat. According to the professor, sprouting will make the food sweet and nutritious.

Third, the reading says that after sprouting the paste, it was kept in the open air which began fermenting the wheat. The fermentation caused bubbles to form in the wheat paste which suggests that baking food is easier to eat. The professor opposes this point by explaining that sprouting occurs due to open air, yeasts and water.After this sprouting process, fermentation occurs due to the formation of bubbles and foam and tasting the bubble leads to the discovery of beer from grain.
