The given diagram illustrates how pizza dough is made. Overall, the whole process involves seven main stages, beginning with putting the ingredients into a mixer and ending with cutting the dough equally.
In the first stage, ingredients including 4 cups or 500 grams of flour, 1 and a half cups or 325 grams of water, 2 teaspoons of salt and half a teaspoon of dry active yeast are poured into a stand mixer. After that, they are mixed by an electric mixing machine at low speed for the first 2 minutes. Then the speed is increased into medium and the ingredients are mixed for 5 minutes before being mixed at slow speed again for the last 2 minutes.
In the next step, the mixed dough is let rest for at least 2 hours so that it can expand two times as big as its original size. Following that, the risen dough is worked manually by hands to remove all air bubbles inside. Finally, it is divided into three pieces, each of which weighs 275 grams.
