The flow chart delineates how smoking fish is produced on a small scale.
There are totally eight stages occurring, in which, the first step begins with catching fish and the final one is transportation of products.
The process commences with catching fish then cleaning them by a knife before the fish are soaked in salt water in 30 minutes. Subsequently, the fresh fish are poached in 5 minutes then removed from the salt water to prepare for the smoking process.
The following step is the smoking process, in which the fish are put in a vat made of wood and hung up with wires, and then they are smoked. As soon as this stage is complete, these smoked fish are dyed by adding yellow color to their flesh. Following that, the smoked colored fish are packaged in boxes and eventually transported to stores.
