Overall, the structure of a smokery consists of lids, a pipe and a box for storing foods while smoking. The heating process of a smokery includes three stages, beginning with the flow of air into a hole underground and ending with smoking foods.
In terms of the fundamental structure of a home smokery, there are two lids that are placed on the ground level and on top of 2 areas. Under the ground, there are 3 sections to store air, burn logs to produce smoke and smoke food.
In the first stage, air will flow into a dug area when the lid on top is opened. Air, then, flows through another path and serves as the fire maintenance to burn logs in the closed section to produce smoke. After the second stage, smoke will flow through a pipe with bricks placed on top of it. Lastly, the ending stage is where smoke penetrates through the bricks under the ground level to smoke foods such as fish, meat in a box
