Furthermore tooth decay occurs at pH levels less than 5.5, with fruit sugar and cane sugar taking a longer time to transition from dangerous acid levels to a level where to tooth decay is less likely to occur.
On consuming sugar or honey there is an increase in acidity within the first five minutes, with cane sugar causing acidity to rise to a staggering 2 on the pH scale. Cane sugar takes over 30 minutes to reach a level of safety. This is a dramatic difference to honey that causes the acidity level in the mouth to rise from a 7 to almost 5 but takes slightly under 15 minutes to climb to the level where tooth decay is unlikely.
We can see from the graph that fruit sugar makes the acidity in the mouth rise to almost 4.5 and nearly 20 minutes to fall to 5.5. This concludes that honey is the safest intake in-terms of sugar and causes the least side effects concerning dental health.
