The given diagram illustrates how black tea is produced in two ways.
Overall, what stands out from the diagram is that the process of manufacturing black tea consists of two main stages, namely harvesting and processing.
The first step begins with tea leaves being collected, which only allows buds and top leaves so as to produce the best quality tea. It is followed by the withering step in which the leaves are 60% dehumidified by the air from a fan.
Subsequently, depending on each type of tea, nearly dried tea leaves are divided into two methods, namely the traditional and the modern one. While the former is used for loose tea, the latter is dedicated to producing tea bags. Regarding the traditional method, after tea leaves are rolled until being flat and broken, enzymes can get out of them. Meanwhile, as for the modern method which is more rapid than the conventional one, once leaves are cut, torn and curled, smaller granular pieces are created.
It is followed by the oxidation and fermentation process, in which rolled leaves are put on tiles or cement. Then, enzymes, along with the air, allow leaves to turn into copper color. Finally, put into an oven or a hot air dryer, copper leaves fully evaporate and then, they give off flavor and scent.
