The diagram illustrates the various processes for manufacturing black tea. There are two methods: Traditional and modern. Every method have five main stages: from picking fresh tea leaves stage to black tea is released.
In the first stage of process, people only choose buds and two top fresh tea leaves to pick, which make sure for good quality tea. Then, leaves are put on rack and under effect of air, moisture of teas leaves will declined 40%. In the third stage, which is called oxidation, if using traditional method, leaves are rolled flat and broken, enzymes of tea leaves are released. If choosing modern method, leaves will cut, torn and curled, which make leaves become smaller granular pieces. Modern technique seem quicker than traditional technique.
Next, leaves are rolled and spread on titles or cement. This stage, combination between enzymes and air will make leaves change to copper color. In the drying stage, leaves will put into oven or hot air dryers and 97% in moisture total out. The final, fresh tea leaves become black tea with feature flavour and aroma are released.
