The given process diagram demonstrate the smoked fish production procedure from the initial fish through 11 steps.
At the beginning, fresh fish are caught from the ocean then put on boat or large ship to transport to the port. Subsequently, fish are put in the refrigerated container in order to prevent bacteria to invade and ruin the fish. After a certain time, fish are thawed and moved into the preparation stage. After ice has been melted, fish are soaked into fresh water to wash outside, then each fish is cut into two half. In the next stage, fish are put in a mixture includes salt water and yellow coloring. The purpose of this stage is to guarantee the fish are completely clean and artificial coloring make fish look more attractive to customers. Following this, the most important stage is smoking the fish which help fish have a longer shelf-life. Next, all the smoked fish are packed into container and freeze one more time to keep fish fresh during the food mile to the shop through the distribution process. Lastly, the procedure culminate in the fish shop and consumed by customers.
