Overall, the process includes both mechanical and biological steps, beginning with the treatment of raw milk and making it fresh depending on the subsequent procedures.
Look at the first diagram. The mechanical steps show the way to make cheese from the first step to make milk fresh. Initially, the mechanical steps have eight steps including raw milk, pasteurization, standardization and filtration, rennet ( enzyme), fermenting microorganisms inoculation, coagulation ( curding), cutting and stirring and cooking.Once treated, the factory need to raw milk it’s common way for cheese making. After that, they put them on a machine called pasteurization for sure milk is clean or inoculated with fermenting microorganisms. Next to inoculation, the enzyme rennet is added to trigger coagulation, it contains curds and whey. Finally, these mechanical steps are cutting and stirring for cooking.
Look at the second diagram for biological steps including six steps curds, milling and salting, fresh cheese, pouring into methods, pressing, ripening and ripened cheese. For the first step is curds, it is the time when people are draining of whey. Next to that is milling and sprinkle salt evenly. Pouring into molds and pressing it for each cup, they also have a place to dispose of additional whey. After that, the molded cheế undergoes a ripening period, which varieties in length depending on the desired flavor and texture.Finally, resulting in the final aged cheese product.
