The illustration presents an overview of the key stages involved in the production of frozen fish pies from two main raw ingredients called potatoes and fresh salmon. Overall, there are three main stages in its manufacture, from delivery to dispatch.
The whole manufacture starts with the delivery of the potatoes to the factory up to a month before the process begins, and they must be cleaned, peeled and sliced with a view to removing any undesirable dirt that remains. Once the potatoes have been prepared, it is then boiled, chilled and stored.
Meanwhile, the start of the salmon production is when it is being delivered within 12 hours, before being seasoned with lemon juice and salt and then being cooked in the steam oven. After this particular stage had finished, it then went through a manual process, not only having the salmon be removed and disposed of the skin and bones but also being inspected and well-prepared with peas and sauce by the factory workers. It’s at this particular point that the potatoes are being added, after this has been thoroughly blended together, the mixture enters the stage of being wrapped, frozen and then being stored in order to be dispatched.
